For Your Pantry



While at the Bank yesterday I ran into an old family friend who said she had more tomatoes in her garden than she could use and I should come over. After finishing my shopping I dropped by their place. We walked out to the garden to pick a small box of tomatoes for me to use and can. I spied her beets with disbelief! They where HUGE! She pulled some and topped off the box.



That is just TEN BEETS in my sink for me to start making beet pickles with. You probably won't find them that size in your local farmer's markets -- I never got mine that big before either.



I cut the tops off, covering with water, then setting them to boil while I worked on the tomatoes. Probably about 45 minutes.



I removed them from the water to cool retaining the water for use later. The cooked beets are easy to peel just by scraping the skin and in many cases the skin just falls off.



Slice and dice your cooked beets into bite sized chunks suitable for packing into your jars.



Place your chunked beets in an appropriate sized pot. The pickling sauce is 1 cup of the "red" water that you boiled your beets in originally. 1 cup of sugar. 1 cup of vinegar. 1/2 teaspoon pickling salt and about 5-8 dried whole cloves per portion of sauce required to cover the diced beets.



Bring them back to a rolling boil for about 15-20 minutes before you begin to jar them up in clean sterilized canning jars.



I got 5 quarts of beet pickles from just 10 of her beets! We enjoyed those in the bowl right away but the beets should be allowed to set for a few weeks in the pantry to get the full flavors through them for those special occasions..

I let my beets get that big too. I only have to grow them every other year.

Homemade beet pickles are the only way to go. The store bought ones don't even come close to being edible.
Keep us informed on the new member of the pack. I have been doggie sitting a 6 month old pup for the last week, while its owner was in hospital.
